Ingredients
- 125g soft butter
- 3/4 cup Caster Sugar
- 2 eggs
- 2 Dessert spoons of coco
- 2 Dessert spoons desiccated coconut
- 1/2 cup milk
- 1 cup Self Raising Flour
- 1 tspn Vanilla
Method
- Preheat oven to 175 degrees (fan forced)
- Lightly grease a 20cm baking tin
- Beat sugar and butter, while it’s beating…
- Add coconut to milk, stir and allow to stand so milk soaks in
- Add eggs, and vanilla to bowl with butter/sugar and beat
- Sift Flour and Coco
- Add small amounts of flour mixture and Milk mixture alternately to bowl and mix in
- Bake for 40 – 45 mins
