Spaghetti and broccoli and chilli

Ingredients

  • 1 head broccoli
  • 4 dices eschallots
  • 4 cloves Garlic, finely chopped (4 tspn minced garlic)
  • 1tspn capers
  • 2 diced chilli (remove seeds of you like)
  • 1T Olive Oil
  • Spaghetti
  • Parmesan or Pecorino cheese
  • Pine Nuts (optional)

Method

  • Separate and Chop broccoli florets (1cm wide)
  • Peel broccoli stem with potato peeler, grate coarsely
  • Boil water, add salt and add pasta (cook according to directions, approx 10 mins)
  • Cook Eschallots, garlic, capers and chilli in olive oil for 3-4 mins over medium heat
  • Add broccoli to pan with salt and pepper, cook 3-4 mins (don’t overcook the broccoli for best texture and flavour)
  • Cook pasta, drain well and add to broccoli sauce
  • Serve with grated parmesan or pecorino cheese. Add toasted pine nuts.

Fettuccine carbonara recipe

Serves 2

  • In a medium saucepan, add 2 litres of water. Bring to boil and add salt.
  • Add fettuccine and cook for 6 minutes until al dente.
  • Meanwhile, in a large frying pan on medium heat, cook ham with a splash of olive oil for 5 minutes until golden and crispy.
  • Add fettuccine with tongs to the pan right away while still really hot. Make sure you save some of the cooking pasta water.
  • Slowly mix in egg yolks, cream and 3 tbsp of the cooking pasta water to get a nice creamy sauce. Add pepper and cheese, toss and serve.

Perfect soft boiled egg

Use room temperature eggs, remove from fridge 30 mins in advance.

Bring water to gentle boil, about 5cm deep, to just cover the eggs. Dont use a bigger pan than necessary.

Then gently lower eggs into water on a large spoon, dont drop them.

4.5 mins for runny yolk
5.5 if you are scared of any uncooked white.

Gail’s Chocolate Cake

Ingredients

  • 125g soft butter
  • 3/4 cup Caster Sugar
  • 2 eggs
  • 2 Dessert spoons of coco
  • 2 Dessert spoons desiccated coconut
  • 1/2 cup milk
  • 1 cup Self Raising Flour
  • 1 tspn Vanilla

Method

  • Preheat oven to 175 degrees (fan forced)
  • Lightly grease a 20cm baking tin
  • Beat sugar and butter, while it’s beating…
  • Add coconut to milk, stir and allow to stand so milk soaks in
  • Add eggs, and vanilla to bowl with butter/sugar and beat
  • Sift Flour and Coco
  • Add small amounts of flour mixture and Milk mixture alternately to bowl and mix in
  • Bake for 40 – 45 mins
